Originally invented in the Joseon Dynasty as a royal dish, reserved for official banquets and state dinners, japchae is still associated with celebrations in modern-day Korea, and is often served at birthdays, weddings, and other formal festivities. Way back in the 17th century, it was primarily a veggie-based stir fry (“japchae” itself simply translates to “mixed vegetables”). It wasn’t until the 1900s that sweet potato-based glass noodles, a product of culinary cross-pollination from China, made their way into the dish, to make Japchae what we know today. All of which is to say, though japchae may have changed over the years, it’s still a celebration- worthy dish that’s emphatically fit for royalty. Coming to us straight from a supplier in Korea, CuratedCravings™ Japchae Fried Rice recontextualizes this iconic entrée into something even heartier and homier. It’s made with a base of white rice and glass noodles, along with a mix of thinly sliced shiitake mushrooms, cabbage, peppers, onions, and carrots, all of which are seasoned with soy sauce and sesame oil. After just a few minutes in the microwave or on the stovetop, it serves up beautifully, offering rich aromas, savory and umami flavors, and a wide spectrum of tender textures. And for an extra special treat, we especially like it topped with a freshly fried egg.
