This month’s returning Spotlight Cheese is brought to us by the fine folks at Kerrygold® — or, perhaps more specifically, it’s brought to us by grass-fed cows, who produce the milk that those fine folks use in their delightfully creamy dairy products. And for this particular cheese, they’ve used that rich, flavorful milk to create a creamy Irish Cheddar that that’s flavored with flakes of fiery red Chili Peppers. This seemingly simple combination provides a surprisingly complex depth of flavor, as the creaminess of the Cheddar tempers the heat of the Chili Peppers, which in turn bring out some of the Cheddar’s latent sharpness. A bit like a slightly more sophisticated Pepper Jack, Kerrygold® Irish Cheddar with Chili Peppers slices, dices, and grates with ease, making it a handy ingredient for using in recipes and sprinkling atop other dishes, as well as a stellar cheese to showcase in its own right. We particularly like it as part of a patty melt or mixed into macaroni & cheese, or using it to impart spice into dishes that normally lack it, like broccoli soup or roasted asparagus.
